(Today Is a Day Off) The First Day of Helping at a Pastry Shop on Christmas

It is just before Christmas! This year, I will help my brother at his pastry shop until the 25th. Today is the first day. It will be the most physically challenging three days of the year. I might not be able to update from tomorrow.

Effective use of unusable sugar

By the way, I realized something about frugality at the pastry shop while slicing cookie dough two days ago. They made good use of the unusable clumps of sugar.

In a pastry shop, they use various types of sugar. One of them tends to clump together when it absorbs moisture in the air. Since those lumps tend to be difficult to melt and affect the texture and taste of the cake, they are unsuitable for delicate cakes. That is why we have to sift powdered ingredients, such as flour and sugar, when baking pastries. That process eliminates unnecessary uneven lumps.

A dough roller: it rolls the cookie and pie dough thinly

They skillfully used such leftover clumped sugar in other recipes. They sprinkled it on the outside of the cookies and made them appear attractive. Those sugar lumps looked like beautiful crystals.

In other words, the qualities that seemed like flaws become valuable.

I like such an effective use of leftovers. We can use many unique things that appear negatively for creative purposes.

Although I don’t know how the future unfolds, I am enjoying this strange situation.
